Roast Spinach with Feta and Croutons

Ingredients

1 kg fresh spinach
250 g Feta cheese, crumbled
120 g butter
3 slices of stale bread cut into crouton-size chunks
1 Tbsp salt

Directions

Heat butter in a fry pan and add the bread. Fry until golden and set aside. Add the crumbled Feta cheese and toss around to coat with the remaining butter. Wash spinach thoroughly and remove the stems. Cook spinach in boiling water until just wilted. Strain and squeeze out all the liquid you can. Chop and transfer to a buttered baking tray. Add Feta and croutons to the spinach, stir to incorporate. Bake at 200 for about 15 minutes.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
