Jerusalem Artichoke Salad

Ingredients

700g Jerusalem artichoke
8 rashers bacon
Salad greens e.g. lettuce, rocket, mizuna, corn salad
Olive oil
French dressing
Salt and Pepper to season

Directions

Roast or boil the jerusalem artichoke, cool then chop into small pieces. Fry the bacon, remove from pan. Fry the artichoke pieces until crispy. Arrange the salad leaves in a bowl, top with the bacon and jerusalem artichoke, drizzle with french dressing and sprinkle with salt and pepper.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
