Hearty Fried-Rice

Ingredients

2 Cups White Rice
1 T low sodium soy sauce
2 tsp sriracha sauce
1 T oyster sauce
1 1/2 T Olive Oil
1 Medium Yellow onion, diced
1 Clove garlic
1 medium zucchini, diced
1 Cup shredded carrots
1 Cup green beans, 1/2 inch chopped
1/4 Cup cilantro,
1 Cup broccoli florets

Directions

In a bowl with white rice, add soy sauce, sriracha sauce and oyster sauce. Let it sit. Meanwhile, in a large skillet, over medium heat, add 1 T. olive oil. Then, add garlic, onion, zucchini, carrots, green beans and broccoli. Cook until vegetables soften, about 4-5 minutes. In a small pan, add the remaining olive oil and scramble the eggs. Transfer the scramble eggs into the large skillet and mixed it with the vegetables. Add the bowl of rice into the vegetables mixture. Stir until fully mixed. Garnish the fried rice with cilantro. Optional: Add fresh sliced cucumber on the side.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
