Gem Squash and Sweet Corn

Ingredients

Gem Squash
Corn, off the cob
Butter
Grated Cheese
Seasoning

Directions

Cut the top third off the gem squash/es, reserve the lid for later. Scoop out the seeds. Fill the squash with corn, a knob of butter, cheese and season. Replace the lid and cover entire squash with foil. Bake or grill until done (test by pricking the side of the squash with a fork).

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
