Fattoush (Lebanese Radish Salad)

Ingredients

Salad:
20 radishes cut to the size you prefer.
2 to 4 tomatoes cut to similar size.
1/2 to whole cucumber cut to similar size.
2 to 4 spring onions/scallions sliced.

Dressing:
1 to 2 cloves of garlic.
15 to 20 mint leaves.
juice and zest of 1 to 2 lemons.
4 to 8 tbsp of olive oil.
Flat or curly parsley, small to large bunch.
S & P to taste.

Directions

Cut salad ingredients; prepare dressing in mixer and pour over salad. Salad is traditionally served with crisped up pita bread sprinkled on top and sumac or zartar seasoning.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
