Cabbage and Carrot Salad with a Tangy Dressing

Ingredients

1 head or ½ head cabbage, chopped
2 carrots, sliced very thin or grated
3 radishes, sliced very thin or grated
¼ cup slivered almonds, toasted
2 T sunflower seeds, toasted
½ cup roasted peanuts for topping

Dressing
⅓ cup rice vinegar
¼ cup sugar
2 T vegetable oil
2 T honey
2 T soy sauce

Directions

Combine dressing ingredients in a saucepan and heat gently until the sugar is dissolved. Set aside to cool. Mix together all salad ingredients except the peanuts. Drizzle dressing over, toss peanuts on top.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
