Warmed Beet & Goat Cheese Sandwiches

Ingredients

8 slices of bread of choice
3 medium sized beets
1/3 cup plain hummus
4 tablespoons goat cheese
1 small cucumber
1/2 small red onion
1 large carrot, grated
6-8 basil or spinach leaves
1/2 avocado (optional)

Directions

Preheat oven to 400 degrees Stem and scrub beets, then wrap in foil Place in oven for about 1 hour, or until easily pierced (wear gloves to avoid hot pink hands) Toast bread slices Generously spread hummus on each slice Layer beet slices and remaining toppings Cut each sandwich in half Enjoy (on a perfect little picnic, preferably) :)

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
