Ingredients
500g squash, peeled and chopped or sliced
olive oil
1 Tbsp harissa
1/4 cup white miso
3 Tbsp lemon juice
60 ml olive oil
a handful of greens(silverbeet, baby spinach,kale)
Toasted chopped almonds

Roast the squash in a little olive oil and salt and pepper until soft and caramelized on the edges. Combine harissa, miso, lemon juice, olive oil to make dressing. Toss squash gently with greens and some of the dressing. Taste for seasoning. Serve sprinkled with toasted almonds or seeds.
Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
