Stuffed Tomatoes

Ingredients

2 tomatoes
1 garlic clove
100g feta cheese
1 avocado
2 tbsp olive oil
Salt & pepper

Directions

Cut off the top of the tomato and scoop out the seeds. Finely chop the cheese and garlic, mash the avocado and mix them all together to create a paste. Dress with the olive oil, season with salt and pepper and stuff the tomatoes to serve.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
