Spicy Feijoa Dressing

Ingredients

4 feijoas, peeled
1 hot red chilli, stem removed, or chilli flakes
1 clove garlic
1 thumb fresh ginger, peeled and grated
small handful mint leaves
60ml lime juice
250ml light salad oil
pinch ground cloves

Directions

Using a stick blender or blender, puree the fruit with the oil, then add mint leaves, chilli, garlic, ginger and other ingredients.

Use as a dressing to pour over grilled fish or spiced roast chicken, or toss with an avocado and nut salad.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
