Root Vegetable Fritters with Chevre

Ingredients

6 cups grated root vegetables
1 grated onion
4 cloves crushed garlic
1 Tbsp each coriander and cuminseed, freshly roasted and ground
salt and pepper to taste
200g chevre(soft goats cheese)

Directions

Combine all ingredients and fry one little fritter to taste. Adjust seasoning and shape the remaining mix into fritters. Fry until cooked through. Serve warm layered with sliced chevre. Delicious with tabouli and hummus or a simple green salad.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
