Roasted Gem squash

Ingredients

Small squash ( any type)
Olive or butter
Grated cheese
salt
Pepper

Directions

Preheat the oven to 200c and line a baking tray Slice the top off the squash, remove the seeds and brush ½ tsp of olive oil or butter on the inside. Roast the squash for 30-45 minutes depending on size, until the inside is soft to touch. Remove from the oven and season the inside of the cooked squash. Add your favourite grated cheese and put back in the oven for a few minutes to melt.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
