Raw Beetroot & Carrot Salad

Ingredients

200g (2 medium) beetroots
200g (2 medium) carrots
2 tbsp olive oil
1 tbsp red wine vinegar
Salt & pepper

Directions

If you have never tried raw beetroot you’ll be amazed by the freshness and flavour of this salad. Peel the beetroots and carrots and grate them into a bowl. Add the oil, vinegar, salt and pepper and mix to combine.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
