Potato (or Kumara), Kale Pizza

Ingredients

1 pizza base
1 cup kale, washed and chopped
1 or 2 potatoes or kumara, peeled and sliced thinly
4 slices swiss cheese
good quality olive oil or truffle oil
Salt, pepper and chilli flakes to taste

Directions

Assemble the pizza: Arrange swiss cheese evenly over the pizza base. Arrange kale on top of the cheese and then potato or kumara slices on top of that. Season with salt and pepper to taste and a dash of chilli flakes if you wish. Drizzle lightly with olive oil to finish. Bake for about 15 minutes in an oven set to 150C.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
