Parsnip, Apple & Onion Soup

Ingredients

2 cups broth
4 parsnips, sliced
4 apples, sliced
1 onion, chopped
5-6 cloves garlic, peeled
Salt and Cracked Pepper to taste

Directions

Preheat oven to 175°C. Roast all veggies on a tray with olive oil/ coconut oil until fork tender. When done, blend all veggies with broth in a food processor or blender until creamy. Quick, simple, and delicious!

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
