Parmesan Roasted Squash

Ingredients

1 squash, peeled and chopped
¾ c cream
3 sage leaves
⅔ c finely grated parmesan cheese

Directions

Preheat oven to 200. Toss squash with cream and sage in a shallow baking dish and season. Bake, covered, for 30 minutes. Stir in half the cheese and sprinkle the rest over the top. Roast, uncovered, until squash is tender and starting to brown, about more minutes. Let rest for at least 5 minutes before serving.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
