Ingredients
6 medium carrots
1 1/2 cups dates
1/2 cup sunflower seeds
1/2 cup sweetened coconut
1 t cinnamon
1 t nutmeg
1 T icing sugar (optional)

Use attachment on food processor or hand held shredder and shred carrots In a food processor, add shredded carrots, dates and sunflower seeds Process until mixture becomes somewhat sticky. Add coconut, cinnamon and nutmeg and process until blended. Roll mixture into bite size pieces. Place on tray lined with baking paper. Refrigerate for at least 1 hour. Sprinkle with icing sugar before serving if desired.
Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
