Mushroom and Spinach Salad

Ingredients

½ C olive oil
¼ C white vinegar
1 small onion, chopped
½ t basil
salt and pepper to taste
Mushrooms, sliced fine
Spinach

Directions

Combine the oil, vinegar, onion and basil and pour over the mushrooms. Marinate for at least 2 hours at room temperature or overnight in the fridge. When ready to serve, prepare spinach and top with mushroom mixture.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
