Kohlrabi and apple salad with mustard dressing

Ingredients

3 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
21medium kohlrabi or 1 medium celeriac, peeled, thinly sliced
2 small heads little gem, torn into bite-size pieces (about 6 cups)
1 crisp red apple (such as Crimson Crisp), thinly sliced
4 tablespoons chopped fresh chives, divided

Directions

Step 1 Whisk oil, vinegar, and mustard in a large bowl; season with salt and pepper. Step 2 Add kohlrabi, frisée, apple, and 2 Tbsp. chives to bowl with dressing and toss to coat; season with salt and pepper. Step 3 Top salad with remaining 2 Tbsp. chives just before serving.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
