Kiwi and Tangelo Salsa

Ingredients

1 tablespoon vegetable oil
1 red onion, diced
1 teaspoon of mexican chili powder or fresh mild green pepper
2 tangelos, de-seeded and cut into pieces
2 kiwifruit, peeled and diced
1 tablespoon lime juice

Directions

In medium-sized pan, heat oil over medium heat. Add onion and pepper and saute until just slightly soft, about 2 minutes. Remove from heat and stir in remaining ingredients. Chill for at at least one hour.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
