Kale/Cavolo Nero Pesto

Ingredients

1 small bunch kale/cavolo nero
1 c. fresh mixed greens
1/3 c. unsalted pepita seeds
1/4 c. +2 T. extra-virgin olive oil
salt and pepper
1 T Greek yogurt

Directions

Place the kale and mixed greens in the bowl of a food processor, process on high until the greens are well chopped. Add the pepita seeds and process again until combined. With the processor running, slowly add the olive oil until the mixture is smooth. Turn the processor off and season. Add the yogurt and pulse until smooth and creamy.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
