Garlic Shrimp Stuffed Avocados

Ingredients

·1 avocado, halved and pitted
·2 cups shrimp, defrosted
·4 garlic cloves, minced
·1 tablespoon olive oil
·Chill powder, to taste
·Sea salt and black pepper, to taste
·Fresh parsley or cilantro, garnish

Directions

Scrape out most of the meat of the avocado, leaving a very thin layer to hold up the shell better. Set aside Chop avocado meat into squares and place in a bowl. In a pan, place about 2 tablespoons of olive oil, the minced garlic, shrimp, chili powder, salt and pepper. Cook over low heat, or just until the shrimp turn pink, then transfer everything into the bowl with the avocado pieces. Add in the chopped hard boiled eggs. Spoon mixture into the avocado shells and garnish with parsley/cilantro and a sprinkle of black pepper. The, serve and enjoy!

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
