Sweet chilli chip Courgettes

Ingredients

2 large courgettes, or 4 small courgettes.

1 tbsp Cold pressed rapeseed oil
1 tbsp sweet chilli sauce
1 tbsp soy sauce
salt and pepper to taste.

Directions

Trim the ends of the courgette and discard. Cut the courgettes into thick chips.

Heat the oil in a frying pan over a medium-high heat. Add the courgettes and season with salt and pepper. Cook for 3 or 4 minutes, then turn them over and cook for a further 3 or 4 minutes, until golden.

Mix the sweet chilli sauce and soy sauce together and pour over the warm courgettes, then serve.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
