Everyday Kale Salad

Ingredients

Fresh kale
Olive oil
Parmesan
Lemon juice or apple cider vinegar
Garlic clove, finely minced
Nuts or seeds
Salt and Pepper

Directions

Remove the tough kale stems (either slice them off with a knife, or remove them by running your fingers down the stems). Chop the kale finely. Add it to a large mixing bowl, drizzle with a generous amount of olive oil, and massage the kale for 1-2 minutes. Add the remaining ingredients. Lemon juice or ACV, Parmesan, garlic and nuts/seeds. Toss until evenly combined. Season with salt and pepper.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
