Easy Cavolo Nero Salad

Ingredients

A bunch of fresh Cavolo Nero leaves
1 avocado
Juice of 1 lemon
1/2 tsp grated fresh ginger
1/4 tsp pressed garlic
soy or tamari sauce to taste
drizzle of honey to taste

Directions

Scoop out the avocado flesh and mash it up well with the lemon juice, ginger, garlic, soy sauce and honey until smooth. Tear the Cavolo Nero leaves into small pieces, then add to the avocado dressing. Using your hands, massage the leaves firmly for a good 2-3 minutes until the leaves are dark and wilted. This breaks down the tough structure of the leaves reducing the sometimes bitter taste, and making it easier to digest. Taste and season to your liking before adding other favourite salad toppings.

Such an amazing project which results in amazing veg to feed us throughout the week ! It has also introduced us to veg we might otherwise not have tried and love them now. And it's all local and chemical free! Cannot recommend it enough :)
